Description

This Broccoli and Mushroom Stir Fry is a quick, flavorful, and nutritious dish combining crisp broccoli florets and tender mushrooms tossed in a savory, slightly tangy sauce with a hint of spice. Perfect as a vegetarian main or side, it features a harmonious blend of soy sauce, sesame oil, and rice vinegar, delivering a delicious Asian-inspired meal in just 25 minutes.

Ingredients

Scale

Vegetables

  • 1 lb (450 g) broccoli florets – Cut into bite-sized pieces for even cooking
  • 10 oz (280 g) sliced mushrooms – White button or cremini mushrooms work best
  • 2 cloves garlic, minced – For a fragrant, aromatic touch

Sauce

  • 1/4 cup (60 ml) soy sauce – The base for the savory sauce
  • 2 tsp sesame oil – Adds a nutty depth of flavor
  • 1 tbsp rice vinegar – For a tangy contrast
  • 1 tsp sugar – Balances the flavors
  • 1/2 tsp red pepper flakes – Optional, for a spicy kick
  • 1 tbsp cornstarch – Helps thicken the sauce

Cooking Oils & Seasoning

  • 2 tbsp cooking oil – Use a neutral oil like canola or vegetable oil
  • Salt and pepper to taste – Adjust to your preference

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, sugar, red pepper flakes, and cornstarch until smooth and well combined. Set this mixture aside; it will be used to flavor and thicken the stir fry.
  2. Heat the Oil: Place a large skillet or wok over medium-high heat and add the cooking oil. Allow it to heat until shimmering but not smoking to ensure proper sautéing of the vegetables.
  3. Sauté Garlic and Mushrooms: Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant. Then add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they release their moisture and turn golden brown.
  4. Add Broccoli: Add the broccoli florets to the skillet, stirring to combine with the mushrooms. Cook for about 5-6 minutes, stirring frequently, until the broccoli is tender-crisp.
  5. Pour in the Sauce: Give the prepared sauce a quick stir and pour it over the vegetables in the skillet. Stir well to coat all the veggies evenly.
  6. Thicken the Sauce: Continue to cook and stir the mixture for another 2-3 minutes until the sauce thickens and becomes glossy, coating the broccoli and mushrooms nicely.
  7. Season and Serve: Taste the stir fry and adjust seasoning with salt and pepper as needed. Remove from heat and serve immediately, either on its own or alongside steamed rice or noodles.

Notes

  • For a vegan version, ensure the soy sauce is gluten-free and vegan certified if needed.
  • Red pepper flakes can be omitted or adjusted based on spice preference.
  • Add toasted sesame seeds on top for extra texture and flavor.
  • Use fresh broccoli and mushrooms for the best taste and texture.
  • To make the sauce thicker or thinner, adjust the cornstarch amount or simmer longer/shorter accordingly.
