Description

These Taco Tortilla Roll Ups are a delicious and easy-to-make appetizer perfect for parties and gatherings. Cream cheese, sour cream, and taco seasoning blend together with cheddar and Monterey Jack cheeses, green chiles, red bell pepper, and green onions, all rolled up in flour tortillas and chilled to create flavorful, bite-sized pinwheels that everyone will love.

Ingredients

Scale

Filling

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (4 ounces) diced green chiles, drained
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup sliced green onions

Wraps

  • 4 large flour tortillas (10-inch)

Instructions

  1. Prepare the filling. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Then, add the sour cream and taco seasoning mix, mixing until fully combined to ensure the flavors meld perfectly.
  2. Mix in additional ingredients. Stir in the shredded cheddar cheese, Monterey Jack cheese, diced green chiles (drained), finely diced red bell pepper, and sliced green onions until everything is evenly distributed throughout the mixture.
  3. Assemble the roll ups. Lay one flour tortilla flat on a clean surface. Spread about one-fourth of the cheese and vegetable mixture evenly over the entire tortilla surface, reaching close to the edges for maximum flavor in every bite.
  4. Roll the tortillas. Tightly roll the tortilla into a log shape, making sure the filling stays inside and the roll is firm. Repeat this process with the remaining tortillas and filling.
  5. Chill to set. Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 1 hour to allow the filling to firm up and the flavors to combine.
  6. Slice and serve. Once chilled, remove the plastic wrap and slice each roll into 1-inch pieces. Arrange the pinwheels on a serving platter and serve chilled for a flavorful appetizer.

Notes

  • For extra flavor, add 1/4 cup finely chopped black olives or a few tablespoons of salsa to the filling mixture before spreading.
  • These roll ups can be made up to 24 hours in advance and stored tightly wrapped in the refrigerator until ready to serve, making them perfect for meal prepping or party planning.
